Recipe: Cauliflower Pizza Base

So I recently posted on my Facebook page a photo of a Pizza I made using Cauliflower as the base and got some requests to share the recipe. So here goes!


What you are going to need:


  • 1 large head of Cauliflower, stalk removed (You can use as much as you want)

  • 1/2 cup Mozzarella Cheese

  • Salt to taste

  • 2 Eggs lightly beaten

  • 1/2 teaspoon Dried Oregano

  • 1/2 teaspoon Garlic powder

  • 1/4 Cup grated Parmesan (I never use this, as it can be an expensive ingredient)


Directions:

  • Preheat the oven to 200 degrees Celsius. Line a baking tray with baking parchment.

  • Break the Cauliflower into florets and pulse in a food processor until fine.


  • Now, this third step I have done in various ways so whatever works for you is fine. Take the Cauliflower and steam in a steamer basket to remove most of the moisture. I sometimes just lay it all out in the oven on some baking parchment and dry it out but this can be time consuming. The fastest way for me is to microwave the Cauliflower to get all the moisture out.



  • Allow the Cauliflower to cool down a little and then place in a kitchen towel or muslin cloth. Wrap it all up and squeeze all the moisture out of the Cauliflower. It should be practically dry. You might have to repeat steps 3 and 4 to get dry Cauliflower "dough". It will end up looking like a ball of mashed Cauliflower.

  • Once done, transfer Cauliflower into a bowl and allow to cool before adding the the rest of the Ingredients.


  • Spread into a square or circle, depending on what you like, on the baking parchment that your prepped earlier and bake in the oven until you can see the edges turn golden. Most recipes say 20 minutes, but it is best to just keep an eye on it so that you don't burn it.



  • Remove from the oven, Put your desired toppings and mozzarella as desired and bake for a further ten minutes or until you get bubbly, golden, melted cheese.

  • Remove from oven, allow to cool for 5 minutes as this base kind of falls apart when too hot I think.
